This almond stuffed French toast combines creamy almond filling with crispy golden bread, making it the perfect indulgent breakfast or brunch treat.

- 6 slices thick-sliced brioche bread
- 4 oz cream cheese, softened
- 2 tablespoons almond butter
- 2 tablespoons powdered sugar
- 3 large eggs
- 3/4 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 2 tablespoons butter (for frying)
- Maple syrup, for serving
- Optional: sliced almonds, fresh berries, powdered sugar for garnish
Instructions
- In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon until smooth.
- In another bowl, mix cream cheese, almond butter, and powdered sugar until well combined.
- Spread the almond filling onto three slices of brioche and top each with another slice to form sandwiches.
- Dip each sandwich into the egg mixture, making sure both sides are coated.
- Heat butter in a skillet or griddle over medium heat.
- Cook each stuffed toast for 3–4 minutes per side until golden brown and crispy.
- Serve warm with maple syrup, and garnish with sliced almonds, berries, or powdered sugar if desired.
Notes
- Use slightly stale bread for better structure and soaking.
- Let filling soften at room temperature for easier spreading.
- Don’t overcrowd the pan to ensure even browning.
