Description

Chewy, spiced, and filled with tender apple bits, these Apple Cinnamon Oatmeal Cookies are the perfect cozy treat. With hearty oats, warm cinnamon, and a touch of sweetness, they taste just like autumn in every bite.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 cups old-fashioned oats
  • 1 medium apple, peeled and finely diced
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat Your Equipment: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine Ingredients: Cream butter, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla. In another bowl, whisk flour, baking soda, salt, and cinnamon. Mix dry into wet ingredients, then stir in oats, diced apple, and walnuts.
  3. Prepare Your Cooking Vessel: Scoop tablespoon-sized dough portions onto the baking sheet, spacing 2 inches apart.
  4. Assemble the Dish: Flatten slightly with the back of a spoon.
  5. Cook to Perfection: Bake 10–12 minutes until edges are golden and centers look soft.
  6. Finishing Touches: Cool 5 minutes on the sheet, then transfer to a wire rack.
  7. Serve and Enjoy: Enjoy warm with milk or store for later.

Notes

  • Use old-fashioned oats for best texture.
  • Pat diced apples dry to avoid soggy cookies.
  • Chill dough 20 minutes for thicker cookies.
  • Store in an airtight container with a slice of bread to keep them soft.
