Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two loaf pans.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, beat together the granulated sugar, brown sugar, and eggs until well combined. Add vegetable oil and vanilla extract, mixing until smooth.
- Fold in the grated zucchini and grated apple.
- Gradually add the dry ingredients into the wet mixture, stirring just until combined. If using, fold in chopped nuts.
- Pour the batter evenly into the prepared pan(s) and bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and let cool completely before frosting.
- To make the frosting: In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and milk, bring to a boil, and cook for 1–2 minutes. Remove from heat and let cool slightly.
- Whisk in powdered sugar and vanilla extract until smooth and creamy. Spread frosting evenly over the cooled bread.
- Slice and serve.
