- 4 cod fillets (about 6 oz each)
- 1 cup finely grated parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, combine parmesan, panko, garlic powder, Italian herbs, salt, and pepper. In a separate bowl, beat the egg.
- Lightly grease the parchment-lined baking sheet or drizzle with olive oil.
- Dip each cod fillet into the beaten egg, then coat it in the parmesan breadcrumb mixture, pressing gently to adhere.
- Place coated fillets on the baking sheet, drizzle with olive oil, and bake for 15–18 minutes until golden and cooked through.
- Remove from oven, squeeze fresh lemon juice over the top, and serve immediately.
Notes
- Pat the cod dry before coating to help the crust stick.
- Use freshly grated parmesan for best results.
- Do not overbake — check for doneness around 15 minutes.
