Description

Crispy, golden baked parmesan crusted cod with a tender, flaky center. Easy to make, full of flavor, and perfect for a satisfying weeknight dinner.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 cup finely grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 2 tablespoons olive oil
  • Lemon wedges for serving


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine parmesan, panko, garlic powder, Italian herbs, salt, and pepper. In a separate bowl, beat the egg.
  3. Lightly grease the parchment-lined baking sheet or drizzle with olive oil.
  4. Dip each cod fillet into the beaten egg, then coat it in the parmesan breadcrumb mixture, pressing gently to adhere.
  5. Place coated fillets on the baking sheet, drizzle with olive oil, and bake for 15–18 minutes until golden and cooked through.
  6. Remove from oven, squeeze fresh lemon juice over the top, and serve immediately.

Notes

  • Pat the cod dry before coating to help the crust stick.
  • Use freshly grated parmesan for best results.
  • Do not overbake — check for doneness around 15 minutes.
