- 2 large ripe bananas, mashed
- 1 1/2 cups rolled oats
- 3/4 cup all purpose flour
- 1/3 cup brown sugar, packed
- 1/4 cup unsalted butter, melted
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add the melted butter, milk, brown sugar, and vanilla extract, then mix until well combined.
- In a separate bowl, combine the rolled oats, flour, baking powder, baking soda, salt, and cinnamon.
- Add the dry ingredients to the banana mixture and stir gently until just combined.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25 minutes until set and lightly golden on top.
- Remove from the oven and allow to cool completely before slicing into bars.
Notes
- Use very ripe bananas for best sweetness and flavor.
- Do not overmix the batter to keep the bars tender.
- Allow full cooling before slicing for clean edges.
