Description

Soft and comforting banana bread oatmeal bars made with ripe bananas, hearty oats, and warm cinnamon. Perfect for breakfast, snacking, or a lightly sweet homemade treat.

Ingredients

Scale
  • 2 large ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 3/4 cup all purpose flour
  • 1/3 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add the melted butter, milk, brown sugar, and vanilla extract, then mix until well combined.
  4. In a separate bowl, combine the rolled oats, flour, baking powder, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the banana mixture and stir gently until just combined.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25 minutes until set and lightly golden on top.
  8. Remove from the oven and allow to cool completely before slicing into bars.

Notes

  • Use very ripe bananas for best sweetness and flavor.
  • Do not overmix the batter to keep the bars tender.
  • Allow full cooling before slicing for clean edges.
