Description
A rich, moist cake topped with caramelized bananas, inspired by the classic Bananas Foster. This upside down delight is perfect for any occasion.
Ingredients
Scale
- 3 large ripe bananas, sliced lengthwise
- 1 cup packed brown sugar
- 1/2 cup unsalted butter, melted
- 1 and 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup whole milk
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In one bowl, whisk together flour, baking powder, cinnamon, and salt. In another bowl, beat the sugar, eggs, milk, vanilla, and 1/4 cup melted butter until smooth.
- Pour the remaining melted butter into the cake pan and sprinkle brown sugar evenly over it. Arrange banana slices on top in a neat pattern.
- Gently pour the batter over the bananas, smoothing the top with a spatula.
- Bake for 40–45 minutes, until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes. Run a knife around the edges, place a plate on top, and carefully invert the cake.
- Serve warm with whipped cream or vanilla ice cream, if desired.
Notes
- Use firm-ripe bananas to avoid mushy texture.
- Parchment paper helps ensure the cake releases cleanly.
- Let the cake rest before flipping for best structure.
