Description

A rich, moist cake topped with caramelized bananas, inspired by the classic Bananas Foster. This upside down delight is perfect for any occasion.


Ingredients

  • 3 large ripe bananas, sliced lengthwise
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 1 teaspoon cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In one bowl, whisk together flour, baking powder, cinnamon, and salt. In another bowl, beat the sugar, eggs, milk, vanilla, and 1/4 cup melted butter until smooth.
  3. Pour the remaining melted butter into the cake pan and sprinkle brown sugar evenly over it. Arrange banana slices on top in a neat pattern.
  4. Gently pour the batter over the bananas, smoothing the top with a spatula.
  5. Bake for 40–45 minutes, until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes. Run a knife around the edges, place a plate on top, and carefully invert the cake.
  7. Serve warm with whipped cream or vanilla ice cream, if desired.
