Description

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup chopped walnuts, toasted
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar


Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream butter and sugar until light. Add eggs one at a time, then mix in mashed bananas and vanilla.
  4. Gradually mix in dry ingredients, then fold in toasted walnuts.
  5. Divide batter into pans and bake for 25–30 minutes. Cool in pans for 10 minutes, then transfer to wire racks.
  6. Beat cream cheese and powdered sugar until smooth. Chill for 10 minutes.
  7. Spread frosting between cake layers and over top and sides. Garnish with extra walnuts.
  8. Chill for 30 minutes before slicing. Serve and enjoy!
