Description

  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 can (21 oz) cherry pie filling
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings for garnish (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine cookie crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Add 1 cup sugar and cocoa powder, mixing until well combined.
  4. Add eggs one at a time, beating after each addition. Mix in vanilla extract.
  5. Stir in sour cream until the batter is smooth.
  6. Pour batter over crust and smooth the top. Bake for 55–65 minutes, or until the center is set but slightly jiggly.
  7. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Remove and refrigerate for at least 4 hours or overnight.
  8. Before serving, top cheesecake with cherry pie filling.
  9. Whip heavy cream with powdered sugar until stiff peaks form. Pipe or spread whipped cream over the top.
  10. Garnish with chocolate shavings if desired, slice, and serve.
