Description

Soft and chewy blueberry oatmeal breakfast cookies made with oats, bananas, and peanut butter. A quick and healthy grab-and-go breakfast.


Ingredients

Scale
  • 2 cups rolled oats
  • 2 large ripe bananas, mashed
  • 1/2 cup peanut butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries


Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, mash bananas until smooth.
  3. Add peanut butter, maple syrup, and vanilla extract, mixing well.
  4. Add oats, cinnamon, baking powder, and salt.
  5. Fold in blueberries gently.
  6. Scoop onto baking sheet and flatten slightly.
  7. Bake for 15 minutes until set.
  8. Cool for 10 minutes before serving.

Notes

  • Use ripe bananas for sweetness.
  • Do not overbake to keep cookies soft.
  • Store in fridge for freshness.
