- 2 large ripe bananas, mashed
- 1/2 cup peanut butter
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, mash bananas until smooth.
- Add peanut butter, maple syrup, and vanilla extract, mixing well.
- Add oats, cinnamon, baking powder, and salt.
- Fold in blueberries gently.
- Scoop onto baking sheet and flatten slightly.
- Bake for 15 minutes until set.
- Cool for 10 minutes before serving.
Notes
- Use ripe bananas for sweetness.
- Do not overbake to keep cookies soft.
- Store in fridge for freshness.
