Description

A quick and comforting dish of tender bulgur wheat simmered with juicy tomatoes, sweet peppers, and fragrant olive oil — perfect as a side or a light main.


Ingredients

  • 1 cup Bulgur Wheat (medium-coarse)
  • 2 medium Tomatoes, chopped
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 medium Onion, chopped
  • 2 tablespoons Olive Oil
  • 1 tablespoon Tomato Paste
  • 2 tablespoons Fresh Parsley, chopped
  • Salt to taste


Instructions

  1. Heat olive oil in a medium pot over medium heat. Add chopped onion and sauté for 3–4 minutes until soft.
  2. Stir in tomato paste and cook for 1 minute to develop flavor.
  3. Add chopped tomatoes and bell peppers. Cook for 5–7 minutes until softened.
  4. Stir in bulgur wheat and mix well with the vegetables.
  5. Add 1¾ cups of water and salt to taste. Bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes until water is absorbed.
  6. Turn off heat and let rest, covered, for 5 minutes. Fluff with a fork.
  7. Stir in chopped parsley and serve warm or at room temperature.

Notes

  • Use medium or coarse bulgur for best texture — fine bulgur may turn mushy.
  • Add lemon juice for a fresh finish or chili flakes for a kick.
  • Perfect for meal prep and pairs well with grilled meat or yogurt.
