- 1 1/2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- zest of 1 lime
- 3 tablespoons fresh lime juice, divided
- 1 tablespoon honey
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat a large skillet over medium-high heat.
- In a mixing bowl, stir together 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, dried oregano, kosher salt, black pepper, cayenne pepper, lime zest, 2 tablespoons fresh lime juice, and honey.
- Add the boneless skinless chicken thighs and toss until thoroughly coated.
- Add the remaining 1 tablespoon olive oil to the hot skillet.
- Place the chicken in a single layer and cook for 5 to 7 minutes on the first side.
- Turn and cook for another 5 to 7 minutes, until the chicken reaches 165°F in the thickest part.
- Remove from the heat, drizzle with the remaining 1 tablespoon fresh lime juice, and sprinkle with chopped fresh cilantro.
- Let rest for 2 minutes, then serve warm.
Notes
- For even better flavor, season the chicken up to 12 hours ahead and refrigerate until ready to cook.
- Use fresh lime juice for the brightest flavor.
- Do not crowd the skillet, or the chicken will steam instead of brown.
