Warm, comforting, and naturally sweet, these Caramelised Banana Baked Oats are the perfect breakfast treat. Soft, custardy, and full of rich banana flavor with just a hint of indulgence from chocolate chips.


Ingredients

  • 2 large very ripe bananas
  • 1 cup rolled oats
  • 3/4 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons maple syrup
  • 1 tablespoon butter or coconut oil
  • 2 tablespoons chocolate chips (optional)


Instructions

  1. Preheat oven to 180°C (350°F) and grease ramekins or a baking dish.
  2. In a skillet, melt butter or coconut oil. Add sliced bananas and a drizzle of maple syrup. Cook for about 5 minutes until golden and caramelised.
  3. In a mixing bowl, combine oats, milk, egg, vanilla, cinnamon, baking powder, and salt. Stir in the caramelised bananas.
  4. Pour the mixture evenly into greased ramekins or a baking dish. Sprinkle with chocolate chips if using.
  5. Place ramekins on a baking tray and bake for 25–30 minutes until the top is set and golden.
  6. Let cool for 5 minutes before serving. Top with yogurt, syrup, or fresh banana slices if desired.
