Ingredients

  • 1 cup rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 2 ripe bananas (1 mashed, 1 sliced)
  • 2 tablespoons maple syrup
  • 1 tablespoon butter or coconut oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons crushed nuts (optional)
  • Extra maple syrup for drizzling


Instructions

  1. Set a saucepan and nonstick skillet over medium heat.
  2. In the saucepan, combine oats, milk, mashed banana, cinnamon, vanilla, and a pinch of salt.
  3. Simmer for 5–7 minutes, stirring occasionally, until thick and creamy.
  4. Meanwhile, melt butter in the skillet and add sliced banana.
  5. Cook banana slices undisturbed for 1–2 minutes per side until golden and sticky.
  6. Spoon oats into bowls and top with caramelised bananas.
  7. Drizzle with maple syrup and sprinkle with nuts, if using.
  8. Serve warm and enjoy.

Notes

  • Use very ripe bananas for the best caramelisation and flavor.
  • Add nut butter or protein powder to the oats for extra nutrition.
  • Store leftovers in the fridge and reheat with a splash of milk.
  • Skip the syrup if your bananas are sweet enough naturally.
