- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3/4 cup cold unsalted butter (for streusel)
- 1/2 cup melted unsalted butter (for batter)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 2 teaspoons vanilla extract
- 2 cups fresh or frozen blueberries
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
- In one bowl, whisk flour, baking powder, and salt.
- In another bowl, beat eggs, granulated sugar, milk, melted butter, and vanilla until smooth.
- Combine dry ingredients into the wet mixture until just mixed.
- Pour the batter into the baking dish and evenly sprinkle blueberries on top.
- Make the streusel: mix flour, brown sugar, cinnamon, and cold butter until crumbly.
- Sprinkle streusel over the blueberries.
- Bake for 40 to 45 minutes until golden and set.
- Let cool 10–15 minutes before serving. Optional: drizzle with lemon glaze.
Notes
- Let ingredients come to room temperature before mixing.
- Do not overmix the batter to keep it tender.
- For extra crunch, toast the streusel separately before topping.
- Great served warm with ice cream or cold with yogurt.
