Description

A cozy and delicious blueberry casserole topped with buttery streusel, perfect for breakfast or dessert. Soft inside with a golden crisp topping.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup cold unsalted butter (for streusel)
  • 1/2 cup melted unsalted butter (for batter)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In one bowl, whisk flour, baking powder, and salt.
  3. In another bowl, beat eggs, granulated sugar, milk, melted butter, and vanilla until smooth.
  4. Combine dry ingredients into the wet mixture until just mixed.
  5. Pour the batter into the baking dish and evenly sprinkle blueberries on top.
  6. Make the streusel: mix flour, brown sugar, cinnamon, and cold butter until crumbly.
  7. Sprinkle streusel over the blueberries.
  8. Bake for 40 to 45 minutes until golden and set.
  9. Let cool 10–15 minutes before serving. Optional: drizzle with lemon glaze.

Notes

  • Let ingredients come to room temperature before mixing.
  • Do not overmix the batter to keep it tender.
  • For extra crunch, toast the streusel separately before topping.
  • Great served warm with ice cream or cold with yogurt.
