Description
A hearty and comforting layered dish made with creamy mashed potatoes, golden caramelised onions, juicy sausages, and a gooey melted cheddar cheese topping. Perfect for family dinners or cozy nights in.

- 1.2 kg potatoes, peeled and chopped
- 75 g butter
- 100 ml milk or cream
- 150 g cheddar cheese, grated
- 6 pork or chicken sausages
- 3 large onions, thinly sliced
- 1 tbsp olive oil
- Salt and pepper, to taste
- Fresh thyme (optional)
Instructions
- Preheat your oven to 200°C (400°F) and grease your baking dish lightly.
- Boil potatoes in salted water until tender. Drain, then mash with butter and milk until smooth. Season with salt and pepper.
- Heat olive oil in a skillet. Add onions and cook on low heat for 25–30 minutes until golden and caramelised.
- In a separate pan, cook sausages until browned and fully cooked. Slice them into pieces.
- Layer half of the mash into the baking dish. Top with sausage slices, then add the caramelised onions. Finish with the remaining mash and sprinkle grated cheese on top.
- Bake for 25–30 minutes or until the cheese is golden and bubbly.
- Let rest for 5–10 minutes, garnish with thyme if using, and serve warm.
Notes
- Use starchy potatoes like Maris Piper or Russet for best mash texture.
- Freshly grated cheese melts better than pre-shredded.
- Add a spoonful of mustard to mash for an extra flavor boost.
- Let onions cook slowly to bring out their natural sweetness.
