Description

A comforting oven-baked chilli made with Quorn pieces simmered in a rich tomato and spice sauce, finished with a golden layer of melted cheese.


Ingredients

  • Quorn pieces, 500 g
  • Olive oil, 2 tablespoons
  • Yellow onion, finely chopped, 1 medium
  • Garlic cloves, minced, 3 cloves
  • Red bell pepper, diced, 1 large
  • Chilli powder, 2 teaspoons
  • Ground cumin, 1 teaspoon
  • Smoked paprika, 1 teaspoon
  • Chopped tomatoes, 400 g can
  • Kidney beans, drained and rinsed, 400 g can
  • Salt, 1 teaspoon
  • Black pepper, 0.5 teaspoon
  • Grated cheddar cheese, 150 g


Instructions

  1. Preheat the oven to 190°C and lightly oil a baking dish.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chopped onion and red bell pepper and cook until softened.
  4. Stir in the garlic and cook briefly until fragrant.
  5. Add the Quorn pieces, chilli powder, ground cumin, and smoked paprika, stirring to coat evenly.
  6. Stir in the chopped tomatoes and kidney beans, season with salt and black pepper, and simmer for 10 minutes.
  7. Transfer the chilli mixture to the baking dish and spread evenly.
  8. Sprinkle grated cheddar cheese over the top.
  9. Bake for 20 minutes until the cheese is melted, bubbly, and lightly golden.
  10. Remove from the oven, rest briefly, then serve.

Notes

  • Let the chilli simmer before baking to deepen flavor.
  • Rest the bake for a few minutes after the oven so it sets slightly.
  • Use a good melting cheese for best results.
