Description
A comforting oven-baked chilli made with Quorn pieces simmered in a rich tomato and spice sauce, finished with a golden layer of melted cheese.
Ingredients
- Quorn pieces, 500 g
- Olive oil, 2 tablespoons
- Yellow onion, finely chopped, 1 medium
- Garlic cloves, minced, 3 cloves
- Red bell pepper, diced, 1 large
- Chilli powder, 2 teaspoons
- Ground cumin, 1 teaspoon
- Smoked paprika, 1 teaspoon
- Chopped tomatoes, 400 g can
- Kidney beans, drained and rinsed, 400 g can
- Salt, 1 teaspoon
- Black pepper, 0.5 teaspoon
- Grated cheddar cheese, 150 g
Instructions
- Preheat the oven to 190°C and lightly oil a baking dish.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and red bell pepper and cook until softened.
- Stir in the garlic and cook briefly until fragrant.
- Add the Quorn pieces, chilli powder, ground cumin, and smoked paprika, stirring to coat evenly.
- Stir in the chopped tomatoes and kidney beans, season with salt and black pepper, and simmer for 10 minutes.
- Transfer the chilli mixture to the baking dish and spread evenly.
- Sprinkle grated cheddar cheese over the top.
- Bake for 20 minutes until the cheese is melted, bubbly, and lightly golden.
- Remove from the oven, rest briefly, then serve.
Notes
- Let the chilli simmer before baking to deepen flavor.
- Rest the bake for a few minutes after the oven so it sets slightly.
- Use a good melting cheese for best results.
