- 2 cups cherry tomatoes, halved
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/3 cup chicken broth
- 1/4 cup fresh basil, chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Season chicken thighs with salt, pepper, and Italian seasoning on both sides.
- Sear chicken for 5–6 minutes per side until golden, then remove and set aside.
- Lower the heat, add garlic to the skillet, and sauté for 30 seconds.
- Add cherry tomatoes and cook until they begin to burst.
- Return chicken to the skillet and pour in chicken broth. Simmer for 7–10 minutes, spooning sauce over the chicken.
- Stir in fresh basil and red pepper flakes if using. Adjust seasoning to taste.
- Serve hot with your favorite sides.
