- 700 g chicken thighs
- 2 medium onions, finely chopped
- 2 medium tomatoes, chopped
- 3 tablespoons vegetable oil
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 cup water
Instructions
- Heat a heavy pan over medium heat.
- Add the vegetable oil and let it warm gently.
- Add the chopped onions and cook until soft and lightly golden.
- Stir in the garlic and ginger and cook until fragrant.
- Add curry powder, cumin, coriander, and salt, then stir briefly to toast the spices.
- Add the chopped tomatoes and cook until they soften and blend into the mixture.
- Add the chicken thighs and stir to coat them evenly with the sauce.
- Pour in the water, stir well, cover, and simmer gently for 30 minutes.
- Remove the lid and simmer for another 5 minutes to thicken the sauce.
- Serve hot and enjoy.
Notes
- Let the curry rest for a few minutes before serving for deeper flavor.
- Add a little extra water if the sauce thickens too much.
- Tastes even better the next day.
