A comforting homemade chicken curry with tender chicken pieces simmered in a rich, spiced sauce that feels warm, familiar, and deeply satisfying.


Ingredients

  • 700 g chicken thighs
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, chopped
  • 3 tablespoons vegetable oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 cup water


Instructions

  1. Heat a heavy pan over medium heat.
  2. Add the vegetable oil and let it warm gently.
  3. Add the chopped onions and cook until soft and lightly golden.
  4. Stir in the garlic and ginger and cook until fragrant.
  5. Add curry powder, cumin, coriander, and salt, then stir briefly to toast the spices.
  6. Add the chopped tomatoes and cook until they soften and blend into the mixture.
  7. Add the chicken thighs and stir to coat them evenly with the sauce.
  8. Pour in the water, stir well, cover, and simmer gently for 30 minutes.
  9. Remove the lid and simmer for another 5 minutes to thicken the sauce.
  10. Serve hot and enjoy.

Notes

  • Let the curry rest for a few minutes before serving for deeper flavor.
  • Add a little extra water if the sauce thickens too much.
  • Tastes even better the next day.
