- 2 boneless, skinless chicken breasts
- 12 ounces fettuccine pasta
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Pinch of red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil and cook fettuccine until al dente. Reserve 1/2 cup pasta water and drain.
- Season chicken with salt and pepper. In a skillet, heat olive oil over medium heat and sear chicken for 4–5 minutes per side until cooked through. Remove and rest.
- In the same skillet, lower heat and add butter and minced garlic. Sauté for 1–2 minutes until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in grated parmesan and whisk until smooth.
- Slice cooked chicken. Add drained pasta to the skillet and toss with sauce. Top with sliced chicken.
- If needed, use reserved pasta water to loosen the sauce. Season with salt, pepper, and red pepper flakes if desired.
- Garnish with chopped parsley and extra parmesan before serving.
