Ingredients
- Tortilla Chips: 1 large bag (10–12 oz)
- Shredded Cooked Chicken: 2 cups
- Cheddar Cheese: 1 ½ cups, shredded
- Monterey Jack Cheese: 1 cup, shredded
- Black Beans: 1 cup, drained and rinsed
- Cherry Tomatoes: 1 cup, halved
- Jalapeños: 2, thinly sliced
- Red Onion: ½, finely chopped
- Cilantro: Handful, chopped
- Lime Wedges: For serving
- Sour Cream: ½ cup
- Guacamole or Avocado: 1 cup
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with foil or parchment.
- In a bowl, toss shredded chicken with salt, pepper, and taco seasoning.
- Spread half the tortilla chips on the baking sheet in an even layer.
- Top with half of the chicken, beans, cheeses, and chopped toppings.
- Repeat layers with remaining chips and toppings.
- Bake for 10–12 minutes or until cheese is melted and bubbly.
- Remove from oven and top with fresh cilantro, sour cream, and guacamole.
- Serve hot with lime wedges on the side.
