Ingredients

  • 2 tablespoons olive oil
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 3/4 cup pastina (tiny pasta stars)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat a large pot over medium heat and add olive oil.
  2. Sauté onions, carrots, celery, and garlic for 5–7 minutes until soft and fragrant.
  3. Pour in the chicken broth and bring to a gentle boil.
  4. Add the shredded chicken, salt, and pepper. Stir to combine.
  5. Add the pastina and simmer for 6–8 minutes, stirring occasionally.
  6. Remove from heat, stir in fresh parsley, and adjust seasoning to taste.
  7. Serve hot with optional parmesan or a drizzle of olive oil.

Notes

  • Use homemade broth for a richer flavor.
  • Do not overcook the pastina to avoid mushy texture.
  • Great for freezing, but add pasta fresh when reheating if desired.
