This Chicken Pesto Caprese Melt combines juicy chicken, fresh basil, ripe tomatoes, and melty mozzarella between crispy, golden slices of sourdough. It’s a comforting yet vibrant sandwich packed with Italian-inspired flavors.

- 4 slices sourdough bread
- 1 cup cooked chicken, shredded or sliced
- 4 slices fresh mozzarella
- 1 large tomato, sliced
- 8–10 fresh basil leaves
- 4 tablespoons pesto sauce
- 2 tablespoons butter, softened
- Salt and black pepper, to taste
Instructions
- Heat a skillet over medium-low heat.
- Spread 1 tablespoon of pesto on each slice of bread.
- Layer mozzarella, tomato, chicken, and basil on two slices. Season with salt and pepper.
- Top with the remaining bread slices, pesto side in. Butter the outsides.
- Melt a little butter in the skillet and place the sandwiches in.
- Cook for 3–4 minutes per side until golden and cheese is melted.
- Let rest for 1 minute, then slice and serve.
Notes
- Use room-temperature butter for easier spreading.
- Cover the skillet for a minute if the cheese isn’t melting fast enough.
- Don’t overstuff the sandwich for easier flipping.
