Description

This Chicken Pesto Caprese Melt combines juicy chicken, fresh basil, ripe tomatoes, and melty mozzarella between crispy, golden slices of sourdough. It’s a comforting yet vibrant sandwich packed with Italian-inspired flavors.


Ingredients

Scale
  • 4 slices sourdough bread
  • 1 cup cooked chicken, shredded or sliced
  • 4 slices fresh mozzarella
  • 1 large tomato, sliced
  • 810 fresh basil leaves
  • 4 tablespoons pesto sauce
  • 2 tablespoons butter, softened
  • Salt and black pepper, to taste


Instructions

  1. Heat a skillet over medium-low heat.
  2. Spread 1 tablespoon of pesto on each slice of bread.
  3. Layer mozzarella, tomato, chicken, and basil on two slices. Season with salt and pepper.
  4. Top with the remaining bread slices, pesto side in. Butter the outsides.
  5. Melt a little butter in the skillet and place the sandwiches in.
  6. Cook for 3–4 minutes per side until golden and cheese is melted.
  7. Let rest for 1 minute, then slice and serve.

Notes

  • Use room-temperature butter for easier spreading.
  • Cover the skillet for a minute if the cheese isn’t melting fast enough.
  • Don’t overstuff the sandwich for easier flipping.
