- 1 1/2 cups cooked chickpeas, drained and rinsed
- 1 cup sweet corn kernels, drained
- 1 cup shredded mozzarella cheese
- 2 tablespoons all-purpose flour
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
Instructions
- Preheat the oven to 200°C and line a baking tray with parchment paper.
- In a mixing bowl, add the chickpeas, corn kernels, shredded mozzarella cheese, flour, paprika, salt, and black pepper.
- Mix everything well until evenly combined.
- Lightly brush the parchment paper with vegetable oil.
- Spread the mixture evenly on the prepared baking tray, pressing gently so it holds together.
- Bake for 18 to 22 minutes until golden and crispy around the edges.
- Remove from the oven and allow to cool slightly so the cheese sets.
- Break into pieces and serve warm.
