- 1/2 cup glutinous rice flour
- 1/4 cup unsweetened cocoa powder
- 1/3 cup sugar
- 1/2 cup milk
- 2 large eggs
- 1/4 cup butter, melted
- 3 ounces dark chocolate
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and generously grease four ramekins.
- In a mixing bowl, whisk together the milk, eggs, melted butter, sugar, and vanilla extract until smooth.
- Add the glutinous rice flour and cocoa powder, whisking until the batter is fully smooth and lump-free.
- Pour the batter halfway into each prepared ramekin.
- Place a piece of dark chocolate into the center of each ramekin.
- Top with the remaining batter to cover the chocolate.
- Bake for 18 to 20 minutes until the edges are set but the centers remain soft.
- Let rest for 2 minutes, then gently unmold or serve directly from the ramekins.
Notes
- Do not overbake or the molten center will firm up.
- Grease ramekins well for easy release.
- Serve warm for the best lava effect.
