Description

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 1½ cups fresh berries


Instructions

  1. Preheat the oven to 130°C and line a baking tray.
  2. Whip the egg whites until soft peaks form.
  3. Gradually add the sugar while whipping until the mixture is glossy and stiff.
  4. Sift the cocoa powder and cornstarch together.
  5. Gently fold the cocoa mixture and vinegar into the meringue.
  6. Spoon the mixture onto the tray and shape into a round with a shallow center.
  7. Bake for 75 minutes.
  8. Turn off the oven and allow the pavlova to cool completely inside.
  9. Whip the cream until soft peaks form.
  10. Top the cooled pavlova with whipped cream and fresh berries before serving.
