Ingredients
Scale
- 250 g (2 cups) all-purpose flour
- 200 g (1 cup) granulated sugar
- 100 g (1/2 cup) brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 2 large eggs
- 120 ml (1/2 cup) milk
- 120 g (1/2 cup) melted or softened butter
- 1 tsp vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and grease or line a 9×5 inch loaf pan.
- In a bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In another bowl, whisk eggs, milk, vanilla, and melted butter. Pour into dry ingredients and mix until just combined.
- Pour half the batter into the loaf pan. Mix 2 tbsp sugar with 1 tsp cinnamon and sprinkle over the batter. Pour remaining batter on top.
- In a separate bowl, combine 100 g brown sugar, 50 g flour, 1 tsp cinnamon, and 45 g cold butter. Mix until crumbly and sprinkle on top of loaf.
- Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a rack to cool completely.
Notes
- Do not overmix the batter — mix until just combined for a soft crumb.
- Chill streusel before adding to improve clumping and crunch.
- Add a glaze after baking for an extra bakery-style finish.
- Store leftovers wrapped at room temperature for up to 3 days.
