Ingredients

  • 4 cod fillets (about 5 oz each)
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lime, zested and juiced
  • 1/2 cup fresh basil leaves, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Heat a large skillet over medium heat. Add olive oil and sauté garlic and ginger until fragrant.
  2. Pour in coconut milk, lime zest, and lime juice. Stir and let simmer for 3 minutes.
  3. Season cod fillets with salt and pepper, then gently place them in the sauce.
  4. Cover and simmer for 8 to 10 minutes, or until cod flakes easily with a fork.
  5. Remove from heat and stir in chopped basil.
  6. Serve hot with extra basil and lime wedges as garnish.

Notes

  • Use full-fat coconut milk for the creamiest sauce.
  • Add basil at the end to keep its flavor fresh.
  • Don’t overcook the cod — it should be flaky and moist.
