- 1 can (13.5 oz) full-fat coconut milk
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 lime, zested and juiced
- 1/2 cup fresh basil leaves, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat. Add olive oil and sauté garlic and ginger until fragrant.
- Pour in coconut milk, lime zest, and lime juice. Stir and let simmer for 3 minutes.
- Season cod fillets with salt and pepper, then gently place them in the sauce.
- Cover and simmer for 8 to 10 minutes, or until cod flakes easily with a fork.
- Remove from heat and stir in chopped basil.
- Serve hot with extra basil and lime wedges as garnish.
