Instructions
- Heat a nonstick skillet over medium heat.
- Whisk eggs with salt and black pepper.
- Add olive oil to the skillet and warm it.
- Cook eggs gently, stirring until soft and fluffy. Remove from heat and mix in cottage cheese.
- Warm tortillas in a separate pan or directly over heat.
