Ingredients

  • 6 small flour tortillas
  • 4 large eggs
  • 1 cup cottage cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cherry tomatoes, diced
  • 1 avocado, sliced
  • 2 tablespoons fresh herbs, chopped


Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Whisk eggs with salt and black pepper.
  3. Add olive oil to the skillet and warm it.
  4. Cook eggs gently, stirring until soft and fluffy. Remove from heat and mix in cottage cheese.
  5. Warm tortillas in a separate pan or directly over heat.
  6. Fill tortillas with egg mixture, then top with tomatoes, avocado, and herbs.
