Instructions

  1. Preheat a nonstick skillet over medium-low heat.
  2. In a mixing bowl, whisk together eggs, cottage cheese, salt, and pepper until smooth.
  3. Add butter to the skillet and let it melt, coating the bottom.
  4. Pour in the egg mixture and let it sit undisturbed for about 10 seconds.
  5. Gently fold the eggs with a spatula, pushing from the edges toward the center until softly set.
