Ingredients
Scale
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 1/2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 1/2 cups cooked chicken, shredded or cubed
- 1 round (5.2 oz) Boursin garlic & herb cheese
- Salt, to taste
- 1/4 teaspoon black pepper
- Fresh basil or parsley, chopped, for garnish
Instructions
- Preheat Your Equipment: Heat a large skillet over medium heat and add the olive oil.
- Combine Ingredients: Add minced garlic and orzo to the skillet. Toast for 2–3 minutes until orzo is slightly golden.
- Prepare Your Cooking Vessel: Stir in chicken broth and diced tomatoes. Bring to a gentle simmer.
- Assemble the Dish: Add cooked chicken. Cover and simmer for 10–12 minutes, stirring occasionally.
- Cook to Perfection: Once orzo is tender and most liquid is absorbed, remove from heat and stir in the Boursin cheese until fully melted.
- Finishing Touches: Season with salt and pepper. Let rest 5 minutes before serving.
- Serve and Enjoy: Garnish with chopped herbs and serve warm.
Notes
- Toast orzo first for deeper flavor and better texture.
- Use leftover rotisserie chicken to save time.
- Add a splash of broth or water when reheating to refresh the sauce.
- Stir frequently to prevent sticking while simmering.
