Creamy Chickens & Sun-dried Tomato Risoni is a one-skillet comfort dish featuring juicy chicken, velvety risoni pasta, and tangy sun-dried tomatoes in a rich, cheesy sauce.

- 2 large chicken breasts, boneless and skinless, sliced thinly
- 1 1/2 cups risoni (orzo) pasta
- 3 garlic cloves, minced
- 1/2 cup sun-dried tomatoes in oil, chopped
- 2 cups baby spinach
- 3 cups chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil (preferably from sun-dried tomatoes)
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season chicken with salt and pepper. Sear until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and sun-dried tomatoes for about a minute.
- Add risoni and stir to coat in oil and flavor. Pour in chicken broth and bring to a simmer.
- Cook uncovered, stirring occasionally, for 10–12 minutes or until pasta is tender and liquid mostly absorbed.
- Stir in heavy cream, spinach, and Parmesan. Return chicken to the skillet and warm through.
- Serve hot with extra cheese or chili flakes if desired.
Notes
- Use the oil from the sun-dried tomatoes for more flavor.
- Add spinach at the end to retain color and freshness.
- Stir pasta regularly to prevent sticking.
