Description

Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 can (14 ounces) crushed tomatoes
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Season chicken with salt and pepper, then sear for 5–6 minutes per side until golden. Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant.
  4. Add crushed tomatoes, chicken broth, oregano, and red pepper flakes. Stir and simmer for 5 minutes.
  5. Return chicken to the skillet, nestling it into the sauce. Cover and simmer for 10–12 minutes until cooked through.
  6. Stir in heavy cream and simmer for 2–3 minutes more.
  7. Turn off heat and stir in chopped basil and parsley. Adjust seasoning to taste.
  8. Serve hot over pasta, rice, or mashed potatoes.
