- 1.5 pounds boneless skinless chicken thighs
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 can (14 ounces) crushed tomatoes
- 3/4 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1/4 cup chopped fresh basil
- 2 tablespoons chopped fresh parsley
- Salt and black pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Season chicken with salt and pepper, then sear for 5–6 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté minced garlic until fragrant.
- Add crushed tomatoes, chicken broth, oregano, and red pepper flakes. Stir and simmer for 5 minutes.
- Return chicken to the skillet, nestling it into the sauce. Cover and simmer for 10–12 minutes until cooked through.
- Stir in heavy cream and simmer for 2–3 minutes more.
- Turn off heat and stir in chopped basil and parsley. Adjust seasoning to taste.
- Serve hot over pasta, rice, or mashed potatoes.
