- 2 cups rolled oats
- 1/2 cup vanilla or chocolate protein powder
- 1/2 cup chopped almonds
- 1/4 cup pumpkin seeds
- 1/4 cup coconut flakes
- 2 tablespoons cocoa powder
- 1/4 teaspoon salt
- 1/3 cup peanut butter or almond butter
- 1/3 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips or chunks (added after baking)
Instructions
- Preheat oven to 325°F (160°C). Line a baking tray with parchment paper.
- In a large bowl, mix oats, protein powder, almonds, pumpkin seeds, coconut flakes, cocoa powder, and salt.
- In a small bowl, whisk together peanut butter, maple syrup, and vanilla extract until smooth.
- Pour wet mixture over the dry ingredients and stir until fully coated.
- Spread onto the baking tray and press firmly into an even layer.
- Bake for 20–25 minutes without stirring. Let cool completely in the pan.
- Break into clusters and stir in dark chocolate chips. Store in an airtight container.
Notes
- Don’t stir during baking if you want big clusters.
- Cool completely before breaking to keep the crunch.
- Add chocolate after cooling to prevent melting or burning.
