Description

A soft and buttery pound cake infused with Earl Grey tea and finished with a light citrus glaze.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 tablespoons Earl Grey tea leaves, finely ground
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice


Instructions

  1. Preheat oven to 175°C and grease a loaf pan.
  2. Cream butter and sugar until light, then add eggs one at a time.
  3. Line the loaf pan with parchment paper.
  4. Mix flour, tea, baking powder, and salt, then combine with wet ingredients and milk.
  5. Pour batter into pan and bake for 50 minutes.
  6. Mix powdered sugar and lemon juice and drizzle over cooled cake.
  7. Slice and serve.

Notes

  • Use high-quality tea for best flavor
  • Do not overmix the batter
  • Cool completely before glazing
