A soft and buttery pound cake infused with Earl Grey tea and finished with a light citrus glaze.

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 tablespoons Earl Grey tea leaves, finely ground
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 175°C and grease a loaf pan.
- Cream butter and sugar until light, then add eggs one at a time.
- Line the loaf pan with parchment paper.
- Mix flour, tea, baking powder, and salt, then combine with wet ingredients and milk.
- Pour batter into pan and bake for 50 minutes.
- Mix powdered sugar and lemon juice and drizzle over cooled cake.
- Slice and serve.
