Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a mixing bowl, whisk eggs, milk, salt, and pepper until fluffy. Stir in cheese, bell pepper, and spinach.
- Coat each muffin cup with non-stick spray or oil.
- Pour egg mixture evenly into muffin cups, filling about three-quarters full.
- Bake for 18–20 minutes, or until eggs are just set and slightly golden.
- Cool for 1 minute, loosen with a spatula, and serve warm.
