Crispy, golden homemade French fries seasoned to perfection with a flavorful spice blend. These fries are crunchy on the outside, fluffy on the inside, and totally addictive.

- 4 large russet potatoes
- Vegetable oil, for frying
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons kosher salt
- 2 tablespoons cornstarch
- Ketchup, for serving
Instructions
- Wash and peel the potatoes if desired, then cut into uniform strips.
- Soak the fries in cold water for at least 30 minutes. Drain and pat completely dry.
- In a small bowl, combine paprika, garlic powder, onion powder, black pepper, and salt.
- Heat vegetable oil in a heavy pot to 325°F (165°C).
- Toss fries in cornstarch to coat lightly.
- Fry the potatoes in batches for 4–5 minutes until just tender but not browned. Remove and drain.
- Increase oil temperature to 375°F (190°C).
- Fry the par-cooked fries again until golden and crispy, about 2–3 minutes per batch.
- Drain on paper towels and immediately sprinkle with the spice blend.
- Serve hot with ketchup or your favorite dipping sauce.
