Soft and golden french toast bites topped with a sweet and tangy blueberry compote, perfect for breakfast or brunch.


Ingredients

Scale
  • 6 slices bread
  • 3 large eggs
  • 1 cup milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 1 1/2 cups blueberries
  • 1 tablespoon lemon juice
  • 2 tablespoons honey


Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Whisk eggs, milk, sugar, vanilla, and cinnamon until smooth.
  3. Melt butter in the skillet.
  4. Cut bread into cubes and dip into the mixture.
  5. Cook until golden on all sides.
  6. Simmer blueberries, lemon juice, and honey until thick.
  7. Serve the bites topped with the blueberry compote.

Notes

  • Use slightly stale bread for best texture
  • Do not overcrowd the pan
  • Adjust sweetness of compote to taste
