- 6 slices bread
- 3 large eggs
- 1 cup milk
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons butter
- 1 1/2 cups blueberries
- 1 tablespoon lemon juice
- 2 tablespoons honey
Instructions
- Heat a nonstick skillet over medium heat.
- Whisk eggs, milk, sugar, vanilla, and cinnamon until smooth.
- Melt butter in the skillet.
- Cut bread into cubes and dip into the mixture.
- Cook until golden on all sides.
- Simmer blueberries, lemon juice, and honey until thick.
- Serve the bites topped with the blueberry compote.
Notes
- Use slightly stale bread for best texture
