Ingredients

Scale
  • 6 cups watermelon, cubed
  • 1 large cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/3 cup fresh mint leaves, roughly torn
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper


Instructions

  1. Chill all ingredients if possible for best texture and flavor.
  2. Add the watermelon, cucumber, feta, and mint to a large mixing bowl.
  3. Drizzle olive oil and lime juice evenly over the ingredients.
  4. Gently toss until everything is just combined.
  5. Season with sea salt and black pepper, then taste and adjust if needed.
  6. Transfer to a serving dish and serve immediately.

Notes

  • Use very ripe watermelon for maximum sweetness.
  • Add feta last if you want larger creamy pieces.
  • Serve immediately for the freshest texture.
