Ingredients

  • 2 medium fresh peaches, thinly sliced
  • 6 cups mixed greens (baby spinach, arugula, romaine)
  • ½ cup walnuts, toasted
  • ½ cup feta cheese, crumbled
  • ¼ small red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1½ tablespoons balsamic vinegar
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper


Instructions

  1. If toasting walnuts, place them in a dry skillet over medium heat and toast for 3–4 minutes until fragrant. Let cool.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to create the dressing.
  3. In a large salad bowl, combine mixed greens, sliced peaches, toasted walnuts, red onion, and crumbled feta cheese.
  4. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Serve immediately with additional feta or black pepper if desired.
