- 12 oz pasta (fettuccine or penne)
- 1 lb steak (sirloin or ribeye), sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup parmesan cheese, freshly grated
- 2 tablespoons parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and set aside.
- Season steak with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear steak for 3 to 4 minutes per side. Remove and let rest, then slice.
- In the same pan, melt butter and cook garlic until fragrant.
- Add heavy cream and bring to a gentle simmer.
- Stir in parmesan cheese until melted and smooth.
- Add pasta and toss to coat in the sauce.
- Return sliced steak to the pan and mix gently.
- Serve topped with parsley and extra parmesan.
Notes
- Use freshly grated parmesan for the best texture.
- Let steak rest before slicing to keep it juicy.
- Add pasta water if the sauce gets too thick.
- Reheat gently with a splash of milk or cream.
