- 2 cups cooked jasmine rice
- 2 tablespoons fresh ginger, finely sliced
- 2 cloves garlic, smashed
- 4 cups vegetable broth
- Juice of 2 limes
- Zest of 1 lime
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 scallions, thinly sliced
- A handful of fresh cilantro, chopped
- Salt, to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Place a medium pot over medium heat and let it warm.
- Add sesame oil, ginger, and garlic to the pot. Sauté for 1–2 minutes until fragrant.
- Pour in vegetable broth, soy sauce, lime juice, and lime zest. Stir to combine.
- Bring to a simmer and cook for 10 minutes to infuse the flavors.
- Add cooked rice and simmer for 3–5 minutes until warmed through.
- Taste and adjust salt or lime juice as needed. Add chili flakes if desired.
- Ladle into bowls and garnish with scallions and cilantro. Serve warm.

- Use day-old rice for best texture.
- Zest the lime before juicing for easier handling.
- Customize with tofu, eggs, or extra veggies.
- Reheat gently to avoid mushy rice.
