Description

A bright and zesty Greek chicken marinade made with olive oil, lemon juice, garlic, and herbs. Perfect for grilling, baking, or pan-searing, this flavorful marinade keeps chicken juicy and tender every time.


Ingredients

  • ⅓ cup olive oil
  • ¼ cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon red wine vinegar
  • 2 pounds boneless, skinless chicken breasts


Instructions

  1. If grilling, preheat grill or grill pan over medium-high heat.
  2. In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, parsley, salt, pepper, and paprika.
  3. Place chicken in a zip-top bag or shallow dish. Pour marinade over chicken, seal or cover, and refrigerate for at least 2 hours or overnight.
  4. Remove chicken from marinade and let excess drip off. Pat lightly with paper towels.
  5. Grill chicken for 6–8 minutes per side or until internal temperature reaches 165°F. Alternatively, bake at 400°F for 25 minutes.
  6. Let chicken rest 5 minutes before slicing. Serve with lemon wedges and fresh parsley.
