- ⅓ cup olive oil
- ¼ cup fresh lemon juice
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon red wine vinegar
- 2 pounds boneless, skinless chicken breasts
Instructions
- If grilling, preheat grill or grill pan over medium-high heat.
- In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, parsley, salt, pepper, and paprika.
- Place chicken in a zip-top bag or shallow dish. Pour marinade over chicken, seal or cover, and refrigerate for at least 2 hours or overnight.
- Remove chicken from marinade and let excess drip off. Pat lightly with paper towels.
- Grill chicken for 6–8 minutes per side or until internal temperature reaches 165°F. Alternatively, bake at 400°F for 25 minutes.
- Let chicken rest 5 minutes before slicing. Serve with lemon wedges and fresh parsley.
