- 1 cup cherry tomatoes, halved
- 1 cup cucumber, thinly sliced
- 1/2 small red onion, thinly sliced
- 1/2 cup kalamata olives, halved
- 1/2 cup feta cheese, crumbled
- 1 avocado, sliced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions
- If using fresh chicken, heat a grill pan over medium-high and cook until charred and juicy. Slice into strips.
- In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper to make the vinaigrette.
- In a large bowl, toss together the slaw mix, cucumber, tomatoes, red onion, olives, and feta.
- Add the grilled chicken and avocado slices on top of the slaw.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Let sit for 10 minutes to allow flavors to meld, then serve.
Notes
- Use pre-cooked or rotisserie chicken to save time.
- For extra crunch, add sliced bell peppers or shredded carrots.
- Keep dressing separate if making ahead to prevent sogginess.
- Add chili flakes or fresh herbs like dill for variation.
