Greek Shrimp Orzo is a vibrant Mediterranean dish combining juicy shrimp, tender orzo pasta, fresh herbs, and tangy feta in a light tomato and white wine sauce. It’s quick, satisfying, and full of flavor.

- 1 pound Shrimp, peeled and deveined
- 1 cup Orzo Pasta (dry)
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 1 pint Cherry Tomatoes, halved
- 1 tablespoon Tomato Paste
- 1/4 cup White Wine
- 1/2 cup Feta Cheese, crumbled
- Zest of 1 Lemon
- 2 tablespoons Fresh Dill, chopped
- Salt and Pepper, to taste
Instructions
- Bring a pot of salted water to a boil and cook orzo until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds, then add cherry tomatoes.
- Cook until tomatoes are soft, then stir in tomato paste and cook for 1 minute.
- Pour in white wine and simmer for 2–3 minutes to reduce slightly.
- Add shrimp and cook for 2–3 minutes per side until pink and opaque.
- Stir in cooked orzo and simmer together for 2–3 minutes to combine flavors.
- Remove from heat and stir in feta, lemon zest, and fresh dill. Season with salt and pepper.
- Serve warm with additional herbs and lemon wedges if desired.
Notes
- Don’t overcook shrimp to keep them tender and juicy.
- Feta should be added last to preserve its texture.
- Fresh lemon zest and dill brighten up the flavors beautifully.
