Ingredients

  • 4 slices of sandwich bread (sourdough or white)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon unsalted butter, softened
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon garlic powder (optional)
  • Pinch of black pepper
  • Fresh thyme leaves (optional)


Instructions

  1. Preheat skillet over medium-low heat.
  2. Mix cheddar, mozzarella, black pepper, and thyme in a bowl.
  3. Spread mayo on one side of each bread slice, and butter on the other.
  4. Place one slice, mayo-side down, in skillet. Add cheese mix, then top with another slice, mayo-side up.
  5. Cook 3–5 minutes per side until golden brown and cheese is melted.
  6. Let rest 1 minute, slice, and serve warm.
