- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon unsalted butter, softened

- Pinch of black pepper
- Fresh thyme leaves (optional)
Instructions
- Preheat skillet over medium-low heat.
- Mix cheddar, mozzarella, black pepper, and thyme in a bowl.
- Spread mayo on one side of each bread slice, and butter on the other.
- Place one slice, mayo-side down, in skillet. Add cheese mix, then top with another slice, mayo-side up.
- Cook 3–5 minutes per side until golden brown and cheese is melted.
- Let rest 1 minute, slice, and serve warm.
