These silky chocolate cherry pots are the perfect guilt-free dessert. Creamy coconut milk blends with rich cocoa and sweet cherries for a decadent yet wholesome treat.


Ingredients

  • 1 cup cherries, pitted and chopped
  • 1 cup full-fat coconut milk
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Pinch of sea salt
  • 1/4 cup dark chocolate (70% or higher), chopped


Instructions

  1. Set out 4 small serving jars or ramekins and prepare your stovetop.
  2. In a small saucepan over medium heat, whisk together coconut milk, cocoa powder, maple syrup, vanilla extract, cornstarch, and sea salt until smooth. Stir in chopped cherries and dark chocolate.
  3. Continue stirring as the mixture heats. Once it starts to bubble and thicken (around 4–5 minutes), remove from heat.
  4. Spoon the mixture evenly into jars using a spatula.
  5. Let cool to room temperature, then refrigerate for at least 2 hours until fully set.
  6. Before serving, top with fresh cherries or a shaving of dark chocolate if desired.
  7. Serve chilled and enjoy.

Notes

  • Use ripe cherries for the best flavor contrast with dark chocolate.
  • Blend before heating for an extra smooth pudding texture.
  • Add a pinch of sea salt to enhance richness.
