- 1 cup cherries, pitted and chopped
- 1 cup full-fat coconut milk
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- Pinch of sea salt
- 1/4 cup dark chocolate (70% or higher), chopped
Instructions
- Set out 4 small serving jars or ramekins and prepare your stovetop.
- In a small saucepan over medium heat, whisk together coconut milk, cocoa powder, maple syrup, vanilla extract, cornstarch, and sea salt until smooth. Stir in chopped cherries and dark chocolate.
- Continue stirring as the mixture heats. Once it starts to bubble and thicken (around 4–5 minutes), remove from heat.
- Spoon the mixture evenly into jars using a spatula.
- Let cool to room temperature, then refrigerate for at least 2 hours until fully set.
- Before serving, top with fresh cherries or a shaving of dark chocolate if desired.
- Serve chilled and enjoy.
