- 1 1/2 lbs boneless, skinless chicken thighs, cut into chunks
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 medium potatoes, peeled and cubed
- 1 cup green beans, trimmed
- 1 cup corn kernels
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
- Return chicken to the pot. Add green beans, corn, diced tomatoes, and chicken broth.
- Season with thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 30-40 minutes, or until vegetables are tender and chicken is cooked through.
- Remove bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of white wine when sautéing the onions.
- This stew can be made ahead of time and tastes even better the next day.
- Serve with crusty bread for a complete meal.
- You can substitute chicken thighs with chicken breast if preferred.
