A vibrant, floral and fruity drink that’s perfect for any time of year, this Hibiscus Blueberry Mocktail blends tart hibiscus with juicy blueberries, fizzy sparkling water, and a touch of lime for a refreshingly delightful sip.


Ingredients

Scale
  • 1/2 cup dried hibiscus petals
  • 2 cups water
  • 1/2 cup fresh blueberries
  • 2 tablespoons maple syrup
  • 2 tablespoons fresh lime juice
  • 1 cup sparkling water
  • Ice cubes, as needed
  • Lime slices and extra blueberries, for garnish


Instructions

  1. In a saucepan, bring 2 cups of water to a boil. Add hibiscus petals and turn off the heat. Let steep for 10 minutes.
  2. Strain the hibiscus tea into a jar or pitcher, discarding the petals. Stir in the maple syrup and refrigerate until chilled.
  3. Add a few blueberries and a squeeze of lime juice to each glass. Lightly muddle if desired.
  4. Fill each glass with ice and pour the chilled hibiscus tea two-thirds of the way up.
  5. Top off with sparkling water, garnish with lime slices and blueberries, and serve immediately.

Notes

  • Steeping the hibiscus longer than 10 minutes can make it bitter.
  • Freeze leftover tea into cubes for extra flavor in future drinks.
  • Adjust sweetness to taste with your preferred sweetener.
