- 2 tablespoons dried hibiscus petals
- 1 cup fresh raspberries, lightly crushed
- 4 cups water, divided
- 3 tablespoons honey
- 2 tablespoons fresh lemon juice
- 2 cups ice cubes
- 4 thin lemon slices
Instructions
- Bring 2 cups of water to a gentle boil in a medium saucepan.
- Remove from heat and add dried hibiscus petals and lightly crushed raspberries.
- Cover and let steep for 10 minutes.
- Strain into a heatproof pitcher, pressing gently on solids.
- Stir in honey while warm, then add remaining 2 cups cold water and lemon juice.
- Cool to room temperature and refrigerate for at least 1 hour.
- Serve over ice and garnish with lemon slices.
Notes
- Adjust honey to taste.
- Do not over-steep to prevent excessive tartness.
- Store in refrigerator up to 3 days.
