  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 3 medium potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup peas (fresh or frozen)
  • 1 (14.5 oz) can diced tomatoes
  • 8 cups beef broth
  • 2 teaspoons salt (or to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef and sear on all sides until browned. Remove beef and set aside.
  2. Add onion, carrots, and celery to the pot and sauté for 4–5 minutes until softened. Stir in garlic and cook for 1 minute.
  3. Return beef to the pot and add potatoes, green beans, corn, peas, diced tomatoes, and beef broth.
  4. Season with salt, pepper, thyme, oregano, and bay leaves. Stir to combine.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 1 1/2 to 2 hours, or until beef is tender and flavors are well developed.
  6. Remove bay leaves and adjust seasoning as needed.
  7. Ladle soup into bowls, garnish with fresh parsley, and serve hot.

  • For richer flavor, sear the beef in batches to avoid steaming.
